If the till does not match turnover at the end of the evening, the reason is usually in one of three places: items given away and never recorded, dishes cancelled after the kitchen had already made them, and bills that walked out unpaid. All three look like a shortfall, but their causes and the people behind them are different.
TEON Restoran keeps them apart. For a complimentary item the line stays, its amount is zeroed, and the reason and who did it are recorded; the price before the comp is kept, so it can be reversed. A cancelled line is not deleted but marked, with a root cause chosen from three: the guest changed their mind, it was entered by mistake, or the kitchen could not make it. The third is genuine wastage, because the dish really was produced. A bill that walks out is closed as a write-off and never enters turnover at all.
The Complimentary and Loss report puts all three side by side: who cancelled what, who comped whom, what was spilled. The reason list is a defined list rather than free text, and a text box only opens when Other is picked. The same reason piling up on the same person becomes visible on its own when you read the monthly report.
